How Did This Happen?

From the Founder:

A part of me died when I moved to Seattle from Chicago in 2008.

  • Square cut thin crust pizza with a sweet sauce - Nowhere to be found
  • Hot dogs topped with sport peppers and mustard - Nope
  • Italian beef sandwiches with giardiniera - Nothing.

I had to do something... Seriously... I truly missed the Holy Trinity of Chicago foods -- pizza, hot dogs & Italian beefs.

I first started trying to recreate my favorite pizza place's sweet sauce... After I got that to where I wanted it, I developed my own thin crust, tavern style pizza dough... Now I needed the right cheese to top it off... That led to importing cheese from Wisconsin and shredding it myself and self-blending three different cheeses to get the right flavor profile... With the pizza perfected, I realized I was missing my favorite pizza topping and the all around ultimate condiment - GIARDINIERA!

It took me well over a decade to get it right, and when friends and family starting praising the pursuit and persuading me to make batch after batch, I knew I was onto something... So in 2022 I finally started researching what we needed to do to get Ronnie's Giardiniera out to the masses. With a few starts and stops we got the perfect team together and went for it. 2024 is the year when it all came together.

Why Only 4 Stars, Not 5?

On the Chicago flag, the four red stars stand for certain historical locations or events that took place in The Second City. The first star is for Fort Dearborn, the second represents the Great Chicago Fire, the third and fourth represent the world fairs that took place in Chicago; the World's Columbian Exposition in 1893 and A Century Of Progress Expositio nin 1933-1934.
